Make a batch of button cookies while you're at it! Kris showed Allison and Jacki how easy it is to make these adorable button cookies, and trust us... they are delicious! She shared some helpful baking tips at the same time! Check out our first (of possibly more!) cooking segment on Three Things @ Three!

QUILT RETREAT BUTTON COOKIES
Yields 4 dozen cookies

INGREDIENTS

  • 1 cup unsalted butter*
  • 1 cup sugar
  • 2 oz reduced fat cream cheese*
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon pure almond extract
  • 1 tablespoon lemon zest
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 teaspoon salt

*Be sure to have these items at room temperature for best results.

Decorating Ideas: Use pull-apart licorice, or thin ribbon to go through the buttonholes after baking, if desired. (You will “punch” the holes through with the end of a straw BEFORE BAKING.) Carefully “thread” buttonholes with a yard needle. (optional)

You could also choose to frost these cookies and simply add 2 small, edible “beads” for buttons as well! 

DIRECTIONS

  1. Cream butter and sugar for several minutes until light and fluffy.
  2. Add egg and beat until mixed in.
  3. Add cream cheese and mix in.
  4. Add vanilla extract, almond extract, and lemon zest. Mix together.
  5. In a separate bowl, mix dry ingredients. Slowly add to the cream mixture and beat until everything is fully incorporated.
  6. Divide dough and knead in desired food colors. 
  7. Place dough between 2 pieces of parchment paper and roll out until it is approximately 1/4" thick.
  8. Place in refrigerator for at least one hour.
  9. Remove parchment paper and use a round cookie cutter to cut out. Place a 2nd round cookie cutter (this time a bit smaller than the first) and press on top with a slight indentation. Finally, take the end of a straw to poke “buttonholes” into the centers.
  10. Place on a cookie sheet that is lined with parchment paper and bake for 9 minutes. DO NOT OVERBAKE! Remove from oven and allow to cool.
